The next set of USDA MyPlate guidelines is set to come out next year, which brings me, a functional and animal-based licensed nutritionist, a lot of dread and general annoyance.
There isĀ some speculationĀ that the food-ranking system, called āNovaā (availableĀ here), which was embraced by the Food and Agricultural Organization (FAO) of the United Nations in 2019, will be integrated into the new guidelines. This system was developed by Brazilian scientist Carlos MonteiroĀ in 2010Ā as he was trying to identify foods that undergo many processing steps with artificial ingredients.
He introduced the term āultra-processedā (UPF), which the global community has since embraced as a replacement for junk food.
That sounds like a good idea, but thereās always a plot twist. Nova has four categories:
Unprocessed and minimally processed foods.
Processed culinary ingredients.
Processed foods (which retain some of their original identity).
Ultra-processed foods, or UPFs.
Category #2, āprocessed culinary ingredients,ā lumps butter and salt, both ancient ingredients humans have consumed for millennia, and industrial vegetable oils (one can be made relatively quickly at home, the other is an industrial product).
Are hamburgers considered ultra-processed when theyāre a little more than a meat sandwich? Other types of sandwichesācheese, for instanceāare not listed as UPF. They considered hamburgers UPF because of the foods that theyāre eaten with, i.e., shakes and fries. Guilt by association!
Another example is that only āmechanically separatedā meat is considered UPF, even though fruits and coffee beans undergo similar processes. (Machines separate meat from the carcass and sever the skin, pulp, seeds, or pit from fruits and beans.) Similarly, āreconstituted meat products,ā such as sausages, are considered UPF, even though sausages have been eaten for millennia.
The Dietary Guidelines Advisory Committee is reviewing the science on ultra-processed foods and obesity for the next update to our nationās dietary guidelines, which are again due out next year. If this committee were to advise against UPF in its expected report this summer, our guidelines could recommend limiting these foods.
Federal agencies are required by law to follow these guidelines, which means the policy has an outsized impact on public schools, military mess halls, and feeding programs for the elderly and the disadvantaged.
